ABSTRAK Masalah gizi di Indonesia masih merupakan masalah yang cukup berat.Pada hakikatnya berawal pada asupan zat gizi yang tidak seimbang.Untuk memenuhi asupan zat gizi seimbang dilihat dari kualitas dan kuantitas, serta kesesuaian jumlah dari suatu makanan yang dikonsumsi.Tujuan penelitian ini adalah untuk mengetahui gambaran asupan zat gizi makro, status gizi, serta tingkat kepuasan siswa terhadap mutu hidangan pada penyelenggaraan makanan di Pondok Pesantren Islamiyah Padang Garugur Kecamatan Padang Bolak Kabupaten Padang Lawas Utara. Penelitian ini adalah penelitian deskriptif yang dilakukan di Pondok Pesantren Islamiyah Padang Garugur Kecamatan Padang Bolak Kabupaten Padang Lawas Utara dengan pendekatan Cross Sectional pada 76 siswa, menggunakan teknik proportional Stratified Random Sampling, analisis data dengan menggunakan distribusi frekuensi dan tabulasi silang. Pengumpulan data dengan wawancara langsung menggunakan kuesioner dan form food recall 24 jam, serta menimbang Berat Badan menggunakan timbangan manual dan mengukur tinggi badan menggunankan microtoise. Hasil penelitian menunjukkan bahwa status gizi berdasarkan IMT/U pada 76 siswa Pesantren Islamiyah Padang Garugur Kecamatan Padang Bolak Kabupaten Padang Lawas Utara yang paling banyak adalah berada pada kategori normal yaitu sebanyak 47,4%, namun ditemukan juga status gizi kurus sebanyak 36,8%, status gizi sangat kurus sebanyak 13,2%, kemudian status gizi gemuk sebanyak 2,6%. Asupan energi kurang dari batas AKG sebanyak 60,5%, asupan karbohidrat kategori baik sebanyak 61,8%, asupan protein kurang dari batas AKG sebanyak 55,3%, dan asupan lemak kurang dari batas AKG sebanyak 59,2%. Tingkat kepuasan terhadap mutu hidangan (porsi, warna, tekstur, dan rasa) makanan. Puas terhadap porsi nasi sebanyak 92,1%, tidak puas terhadap porsi lauk hewani, lauk nabati, dan sayur masing-masing sebanyak 59,2%, 60,5%, dan 55,3%. tidak puas terhadap warna lauk hewani, lauk nabati, dan sayur masingmasing sebanyak 32,9, 42.1, dan 14,4%. tidak puas terhadap tekstur nasi, lauk hewani, lauk nabati, sayur masing-masing sebanyak 14.5%, 19,7%, 26,3%, dan 19,7%. tidak puas terhadap rasa lauk hewani, lauk nabati, dan sayur masingmasing sebanyak 15,8%, 34,2%, dan 25,0%. Saran dalam penelitian ini kepada pihak sekolah diharapkan agar meningkatkan kualitas makanan di Pondok Pesantren Islamiyah Padang Garugur Kecamatan Padang Bolak Kabupaten Padang Lawas Utara khususnya porsi dan variasi makanan yang disajikan kepada siswa agar asupan zat gizi siswa terpenuhi sehingga status gizi siswa dalam kategori normal. It basically starts with unbalanced intake of nutrients. To meet the intake of balanced nutrients seen from the quality and quantity, as well as the suitability of the amount of a food consumed. The purpose of this study is to know the description of macro-nutrient intake, nutritional status, and the level of student satisfaction on the quality of dishes in the implementation of food in Pondok Pesantren Islamiyah Padang Garugur District of Padang Bolak Regency of Padang Lawas Utara. This research was descriptive research conducted in Pondok Pesantren Islamiyah Padang Garugur District of Padang Bolak Regency of Padang Lawas Utara with Cross Sectional approach on 76 students, using proportional Stratified Random Sampling technique, data analysis by using frequency distribution and cross tabulation. Data collection by direct interview using questionnaire and 24 hour food recall form, and weighing Weight using manual scales and measure height using microtoise. The results showed that nutritional status based on IMT / U on 76 Pesantren Islamiyah Padang Garugur District of Padang Bolak Regency of Padang Lawas Utara students was the most in the normal category of 47.4%, but also found nutritional status as much as 36.8%, nutritional status is very thin as much as 13.2%, then the nutritional status of fat as much as 2.6%. Intake of energy is less than the limit of AKG as much as 60.5%, good category carbohydrate intake as much as 61.8%, protein intake less than the limit of AKG as much as 55.3%, and less fat intake than the limit of 59.2%. Level of satisfaction with the quality of dishes (portion, color, texture, and taste) of food.Satisfied with the rice portion of 92.1%, not satisfied with the portion of animal side dishes, vegetable side dishes, and vegetables respectively 59.2%, 60.5%, and 55.3%. Not satisfied with the color of animal side dishes, vegetable side dishes, and vegetables respectively as much as 32.9, 42.1, and 14.4%. Not satisfied with the texture of rice, animal side dishes, vegetable side dishes, vegetables respectively 14.5%, 19.7%, 26.3%, and 19.7%. Not satisfied with the taste of animal side dishes, vegetable side dishes, and vegetables respectively as much as 15.8%, 34.2%, and 25.0%. Suggestions in this study to the school is expected to improve the quality of food in Pondok Pesantren Islamiyah Padang Garugur Padang Bolak District Padang Lawas Utara in particular portion and variety of food presented to students so that the nutritional intake of students is met so that the nutritional status of students in the normal category.
